Can anyone tell me the difference between the below gear sets?

I believe it's mainly material (weight) and construction. The one difference is the ultra torque up (which you didn't list, it's part and the non-helical part is *massively* thick fat flat gears. Good for beyond M170 :-).

Torque set are designed so that the motor doesn't need to turn so much to pull the piston back, this is a perfect option for players that want a quick trigger response. Players that play point or DMR will benifit from this option.
Super Torque is designed that after you have fired the piston head returns to the loaded position so when you pull the trigger the piston is release and then the motor is engaged to pull the piston back again.
High Speed gear set is exactly what it sounds like, totally increases the ROF on your weapon, you need to be very careful though as this can sometimes cause the weapon to misfire (Dry Fire) this can be rectified by using a Cam on the gear which delays the tappet release time enabling a BB to load into the chamber.
Original Ratio is just a strengthened gear set.
Helical gears are designed to mesh together perfectly, this allows great power spring sets to be used as well as making the gearbox alot quieter and to distribute the stresses of the gears over the whole gear set rather than just the contact points where the teeth mesh. Lionel my MP5 you saw has high speed helical gears in it.
